Zesty Chili Lime Chicken Fajitas (Griddle or Sheet Pan!)

Ingredients

For the Marinade:

  • ¼ cup lime juice (plus more for finishing)
  • ¼ cup olive oil
  • 1 clove garlic, minced
  • 1 tsp chili powder (or use 1 Tbsp Trader Joe’s Chile Lime Seasoning)
  • ½ tsp cumin
  • ½ tsp salt
  • Freshly ground black pepper, to taste

Main Ingredients:

  • 1½ lbs chicken breasts, sliced thin
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 12 (6–8 inch) tortillas (corn, flour, or gluten-free)
  • Olive oil (for cooking)
  • Fresh cilantro, chopped

Toppings (Choose Your Favorites):

  • Shredded cheese
  • Sour cream
  • Guacamole
  • Salsa
  • Diced tomatoes
  • Lettuce or shredded cabbage
  • Cauliflower rice or regular rice (optional base)

Time-Saving Prep Tip

Chop all your chicken and veggies ahead of time and store them in airtight containers or Ziploc bags in the fridge. You can even pre-mix the marinade and keep it ready to toss!

Instructions

  • Oven Method: Preheat oven to 400°F. Lightly grease a sheet pan or line with parchment.

  • Griddle: Add peppers and onions to one side and cook for 2–3 minutes, stirring occasionally. Add the chicken and marinade to the other side and cook for 8–10 minutes, turning occasionally, until the chicken reaches 165°F internally.
  • Oven: Spread chicken, peppers, and onions evenly on the pan. Bake for 18–22 minutes, or until chicken is fully cooked.
  1. Finish Strong:
    Squeeze fresh lime juice over everything and sprinkle chopped cilantro on top for a pop of flavor and color.
  2. Serve and Enjoy:
    Warm your tortillas or rice and build your fajitas with your favorite toppings. Great for weeknight dinners or casual get-togethers!
