Smoky, cheesy, crunchy, saucy, and downright irresistible—these griddle-made burgers combine juicy beef patties, crispy bacon, homemade onion strings, and a tangy BBQ mayo all nestled between toasted Texas toast (or not, a bun will do).

Ingredients

For the Burgers:

  • 3 pounds 85–90% lean ground beef
  • 1 egg
  • 2 tbsp liquid smoke
  • 1 tsp kosher salt
  • 1 tsp cracked black pepper
  • 1 tsp granulated garlic
  • 6–8 slices Colby or Monterey Jack cheese
  • 12–16 slices thick-cut peppered bacon
  • 12–16 slices Texas toast (2 per burger)
  • Lettuce, tomato (optional)

For the Homemade Onion Strings:

  • 1 large Vidalia onion, thinly sliced
  • 2 cups buttermilk
  • ½ cup all-purpose flour
  • ½ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • ¼ tsp cayenne pepper
  • Vegetable oil (for shallow frying)

For the BBQ Mayo:

  • ¼ cup mayonnaise
  • ¼ cup BBQ sauce (your favorite)

Instructions

  1. Make the Onion Strings:
  1. Soak thin-sliced onions in buttermilk for at least 10 minutes.
  2. In a shallow bowl, combine flour, salt, garlic powder, paprika, and cayenne.
  3. Heat a shallow layer of vegetable oil on your Blackstone griddle in a foil pan or small cast-iron skillet to 350°F.
  4. Dredge the onions in the seasoned flour and shake off the excess.
  5. Fry the onions in batches until golden and crispy (about 5–6 minutes), flipping once. Set aside on a paper towel–lined plate to drain.
  1. Prep the Bacon:
  1. On a clean, hot griddle surface, lay out bacon strips.
  2. Use a bacon press if available to keep them flat and crispy.
  3. Cook until crisp and set aside.
  1. Mix and Form the Burger Patties:
  1. In a large bowl, combine the ground beef, egg, liquid smoke, salt, pepper, and granulated garlic.
  2. Form into 6–8 evenly sized patties, about 6 oz each.
  1. Cook the Burgers:
  1. Add a light coating of vegetable oil to the griddle and bring to medium-high heat.
  2. Sear burger patties for 3–4 minutes per side, flipping once browned.
  3. When nearly cooked through, top with cheese and cover with a melting dome to finish.
  1. Toast the Texas Toast:
  1. Lightly butter both sides of each slice.
  2. Toast on the griddle until golden brown and slightly crisp on both sides.
  1. Make the BBQ Mayo:
  1. In a small bowl, mix together the mayonnaise and BBQ sauce until smooth.

Assemble the Burgers:

  1. Spread BBQ mayo on the inside of each slice of toasted Texas toast.
  2. Layer the bottom with lettuce or tomato (if using).
  3. Add the cheesy burger patty, 2 slices of crispy bacon, and a generous pile of homemade onion strings.
  4. Top with the second slice of toast.
  5. Serve hot with fries, chips, or coleslaw.
