How to Make Blackstone Cornbread

This recipe is as easy as it gets, thanks to store-bought corn muffin mix. Here’s everything you need to know to whip up this cheesy, golden goodness.

Ingredients:

  • 2 (8.5-ounce) boxes of Jiffy Corn Muffin Mix
  • 1 cup salted butter, melted
  • 1 cup sour cream
  • 4–6 tablespoons sugar (optional, for a sweeter cornbread)
  • 4 large eggs, beaten
  • 1 can sweet corn
  • 1 can creamed corn
  • 1 cup shredded Cheddar cheese
  • Nonstick spray
  • Egg rings

Instructions:

  1. Mix It Up
    Combine all the ingredients in one big bowl. Stir until the batter is well-blended.
  2. Fire Up the Griddle
    Preheat your Blackstone griddle (or any flat top grill) to the lowest heat setting. Place your silicone egg rings on the griddle and give them a good spray with nonstick cooking spray.
  3. Pour & Cover
    Fill each egg ring about ¾ full with batter. The batter will rise as it cooks, so leave a little room. Cover the rings with a melting dome, the griddle lid, or even a 9×13 foil pan to trap the heat.
  4. Cook to Perfection
    Let the cornbread cook for about 14–16 minutes. Check on them occasionally to make sure they’re setting nicely. Once they’re firm, gently remove the egg rings. If they stick a little, just rock the rings back and forth to loosen them.
  5. Serve & Enjoy
    Use a spatula to lift the cornbread off the griddle. Repeat the process with the remaining batter unless you have enough egg rings to cook them all at once.
